Quick Hamburger Stroganoff
1 lb burger
little onion
2 cans mushroom soup (low sodium)
1 cup water
1/2 c sour cream
salt and pepper
cooked noodles (enough for your family)
Brown burger with your onion, drain fat.
Add in next four ingredients, serve over noodles or rice!
I got to use Amish made tomato basil noodles! YUM!
Fried Pickles – The Best Way
Dill Pickle Spears cut in half lengthwise
Egg Roll Wrappers
Mozzarella Cheese
Pan with olive/veggie oil (enough to fry)
1 beaten egg with a touch of water added
Place halved pickle onto center of egg roll wrapper, place cheese on top of pickle. Wrap up pickle and cheese as the egg roll directions say. Spread egg/water mix on the edge of wrapper and do the final roll (this seals it up). Fry in hot oil (be careful as always with hot oil) until golden brown. Cut in half and dip in ranch!
Stuffed Green Peppers in a Casserole!
I hate stuffing green peppers, I don’t know why but I do! So here is an easy way to get that same great taste without “stuffing”!
2 lb hamburger 2 green peppers sliced
1/2 c chopped onion 1 can rotel mix
2 cans diced tomatoes 16 oz of tomato sauce
1 cup corn (frozen or canned, drained)
1 cup quick rice 1.5 cup beef bullion
dash of Worchester sauce salt/pepper
2 cups shredded cheese (any kind you want!)
Heat oven to 375. Grease a 9×13 pan and place green peppers on bottom of entire pan.
Brown hamburger and onion together add Lawry’s season (its the best isn’t it?) and pepper to your desired taste. Remove from heat. Drain fat.
Add in the rest of the ingredients except cheese. Bake for 45 minutes. Remove and top with cheese, Bake another 15 minutes and serve! I cut this recipe in half if its just the 4 of us (2 adults, 2 young kids).
Easy Roast
This takes little to no time to throw together and turns out great.
1 roast (I will use whatever is cheapest or that I have the most of in the freezer!)
2 packs of beef au jus or 2 cups of beef bouillon
1 packet of onion soup mix
carrots and potatos chopped into large chunks (as many as you need to feed your crew)
Put everything in the crockpot, make sure all veggies and meat are covered with liquid. Add water as needed. Cook on Low for 7-8 hours for best results, you can cook on high if pressed for time, the meat isn’t as tender but still full of flavor!
BBQ Mini Meatloaves
1 egg 3/4 c milk
1 c cheddar cheese shredded 1/2 c ritz crackers
1/2 c chopped onion salt/pepper
1 lb hamburger
2/3 c ketchup
1/2 c brown sugar
2 tsp mustard
Heat oven to 350. In a bowl beat eggs and milk. Stir in cheese, crackers, onion, salt/pepper. Add beef and mix well. Shape into 4 small loaves and place in a greased pan. Combine ketchup, brown sugar, mustard and spoon over loaves. Bake for 45 minutes.
Cheddar Ranch Potatoes (double to feed a crew)
4-5 potatoes (cubed)
1 can cheddar cheese soup
3/4 cup milk
1/2 packet of ranch dressing mix
salt/pepper
2 tbs of butter melted
1 cup of bread crumbs/crushed ritz crackers
1/2 c shredded cheese
Heat over to 375, Grease a 9×9 pan. Place potatoes in pan. Heat and mix soup, milk, ranch dressing salt/pepper and pour over potatoes. Cook for 45 minutes. Mix melted butter, bread crumbs and shredded cheese. Place on top of potatoes and cook for another 30 minutes (or until potatoes are soft).
Bean Soup
Ham bone
1 lb of dry pinto beans or variety beans
2 cups celery/carrot mix
1/2 onion
pepper/salt
Boil your ham bone for 30 minutes, put your beans and veggies in. Make sure you have plenty of water in your pot because it will cook down A LOT. Cook on medium-low (slow boil) for 2 hours, checking and stirring occasionally. If need be add water! Serve with hot rolls, corn bread, or bread and butter! Enjoy!
Easy Chicken Wild Rice Soup
1 package of wild rice mix (rice a roni style)
1 cup of chopped veggies (carrots, peas, corn, celery, anything you like!)
1 can of cream of mushroom soup
1 can of half water half milk
1 can of chicken (any size will do)
Cook rice as directed but add in your chopped veggies to cook. When rice is close to finished add cream soup, can of water/milk and chicken. Heat through. YUM!
Chex Mix
9 cups of Chex Cereal (Rice, Wheat, Corn)
3 cups Cheese Crackers
2 cups pretzels
2 cups nuts
1/4-1/2 c oil
1 packet of ranch dressing mix
1/2 cup parmesan cheese
Mix together Chex, Crackers, Pretzels and nuts in a roaster pan to be put in the oven. Coat with oil. Sprinkle Ranch mix and parmesan cheese over the top. Mix well. Cook at 250 degrees stirring every 15 minutes for 1 hour. Cool and enjoy.
Spicy Pretzels
1 bag of pretzels (or whatever is left over from the Chex mix)
1/4 c oil
1/2 tsp cayenne pepper
1/2 packet of ranch dressing
mix oil, pepper, ranch dressing together. Coat Pretzels with oil/seasoning mix. Cook at 250 degrees for 20 minutes stirring at 10 minutes. Cool, grab your favorite holiday drink (seasonal beer, wine, a hot tottie) and enjoy!
Rocky Road “Cake”
A little background on this. I wanted to start my own holiday tradition with my kids. The reason we celebrate Christmas is for the Birthday of Jesus, so birthday cake it is. Except I really don’t like cake. So here is my version of a Birthday cake for him – afterall – it was a rocky road for Mary and Joseph that night.
1 bag of marshmallows
1 bag of chocolate chips
2 cups of peanuts (or whatever is left from the chex mix)
14 oz can of Sweetened Condensed Milk
2 Tbs of Butter.
In a double boiler (or in my case a pan of water and a metal mixing bowl! see below for an example if you don’t have a double boiler pan). Mix Chocolate Chips, Milk, and butter. Melt and mix well. In a large bowl mix Marshallows and Peanuts. Coat the Mallows and Peanuts with the Chocolate mixture and pour into a wax lined 9×13 pan. Cool for 1 hour in the fridge. Peel off the wax paper, sign Happy Birthday to Jesus (blow out the candle) and serve! Delish!
